Double Chocolate Muffins
Recipe taken from
375g self-raising flour
1 tablespoon baking powder
55g unsweetened cocoa powder
85g caster sugar
2 teaspoons vanilla extract
6 tablespoons sunflower oil
140g white chocolate chips
Preheat oven to 200 C / Gas 6. Line two muffin tins with 20 paper cases.
Melt plain chocolate over simmering water, stirring constantly until smooth. Let cool slightly.
Sift together the flour, baking powder and cocoa into a medium bowl and stir in sugar.
In a separate bowl, beat together eggs, vanilla, oil and milk. Stir in melted chocolate.
Fold together dry and wet ingredients, then fold in chocolate chips. Do not beat or overwork.
Fill muffin cases with batter and bake for 20 to 25 minutes or until well risen.
Remove from oven and place onto a wire rack. Dust with icing sugar. Serve warm or cold. Store any leftovers in an airtight container for upto 4 days.
